We've released the Kraken (again!)
This year’s Kraken Sauce is a delightful concoction of aromatic garlic chives, sesame, the last of our kombu and nori stores from this year’s winter harvest, and a nice kick from some local green chile peppers from Tookey Farms in Healdsburg, CA.
While every jar of chili crisp we make uses chiles that have been carefully dried and stored for maximum freshness, any sauce we mix in the fall will be *chef’s kiss* fresh. These jalapeños and poblanos were soaking up that hot Sonoma County sun just days before we folded them into this year’s batch of Kraken Sauce.
We made this sauce for seafood hounds (us) so it’ll taste good on literally anything that comes out of the ocean. But it’s still a vegan product, and will taste AH-mazing on any rice dish or honestly, just alone with a warm crusty piece of sourdough.
INGREDIENTS: Olive oil, garlic chives, shallots, pepitas, sesame seeds, garlic, chile peppers (jalapeño, poblano, New Mexico green) brown sugar, sea salt, Sonoma Coast sea kelp (kombu, nori) Sichuan peppercorns, dill, ginger, spinach, cumin, white pepper, cardamom, fennel seeds, citric acid.
Heat level: Medium.
