Our favorite mermaid snack is back. Green Gems is greener than ever, loaded with locally-foraged mineral-rich kombu to support those digestive and immune systems, and stuffed with as many garlic scapes as we could fit in our car.

Heat level: 1/10. Lots of green chile flavor, zero fire. The better to experience all those umami bits.

What are garlic scapes?

Garlic scapes are the long flowering ends sprouting from the hardneck varieties of garlic plants, which farmers will prune in order to send the plant’s energy back to the underground bulb. Once considered a weed and simply thrown away, scapes are now a magical addition to our already overflowing Sonoma County cornucopia, only available for a fleeting moment in late spring or early summer. For this year’s recipe, we were blessed with sweet and spicy Chesnok Red scapes from Bernier Farms, grown in the Dry Creek region just outside of the town of Healdsburg. The Berniers have been the authority on all things garlic since 1976, and we’re thrilled to be showcasing their prized scapes as a crown jewel in our Green Gems.

We love this sauce. You might even think the secret ingredient is love, but nope, it’s mostly garlic and kelp. Enjoy!

Ingredients: olive oil, garlic scapes, peanuts, sesame seeds, shallots, green chile flakes, garlic powder, pumpkin seeds, dried kombu, apple cider vinegar powder, brown sugar, Sichuan peppercorns, sea salt, ginger, spinach powder, cumin, white pepper, green cardamom, fennel seeds.

This product contains peanuts and sesame. It is shelf stable and there is no need to refrigerate after opening. It is olive oil-based so will firm up when cold.

Wait for it!

My first voyage with Green Gems was with seared cod (not black) with soba noodles, dashi, and Green Gems. I hadn't read the article about Green Gems so was expecting a hot zing and was surprised...until I tasted the gentle flavors, one by one. unfolding in my mouth. I loved the nuanced flavor experience. My cod, soba, dashi, and Green Gems dish was exquisite. I have since tried it on Salmon Cakes (YES!), Salmon Cakes w/ poached egg (WOW!) and this morning, on softly scrambled eggs. I'm making a Seafood Salad for dinner tonight and will add Green Gems to the dressing. I can't wait. I love this sauce!

Drizzling GG on lots of things...

We finally had a chance to pick up a jar of Green Gems. We are really enjoying it. This AM I drizzled it on a piece of quiche for B'fast. Last night we had a mild salmon filet, and GG gave it that subtle, but distinct bit of seaweed flavor. I like the crunch, as I do with all of our Big Spoon sauces, but THIS crunch is that extra flavor of the ocean. Thank you for your flavor curiosities. You sure do pique ours! The GG jar is already half empty! We'll be back for more.

Kelps me wanting more!

Delicious sauce and so glad I signed up for club spoon to taste all the seasonals! I LOVE garlic so this was one I’ve been anticipating. The full lineup of crisp is amazing and it’s nice to see another lightly spiced crisp for the less heat inclined like myself. The only problem with this (and all the Big Spoon products I’ve tasted) is it’s gone too fast!

Makes a fantastic salad dressing

Love putting this on my salads and many other things. I've tried several similar products and this is my favorite in terms of taste and healthiness.

Green gems galore!

This sauce adds a delicious garlicky salty crunch to any dish! Giving each bite a crunchy burst of flavor, the kelp really adds to the umami with only a slight hint of heat from the garlic and chilis. My favorite way to use it is with eggs, but it compliments so much more!
